Ingredients

  • 500g smoked haddock fillet (undyed), skinless and boneless

  • 500g waxy potatoes, thinly sliced

  • 1 leek, cleaned and sliced

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 300ml whole milk

  • 150ml double cream

  • 25g butter

  • 25g plain flour

  • 1 teaspoon Dijon mustard

  • 50g mature cheddar cheese, grated

  • Salt and freshly ground black pepper

  • Fresh parsley, chopped (for garnish)

Method

  1. Preheat oven to 200°C (400°F). Grease a medium-sized ovenproof baking dish.

  2. Gently poach the smoked haddock in the milk in a saucepan over low heat for 5–7 minutes. Remove fish with a slotted spoon; reserve the milk.

  3. In another pan, melt butter. Sauté onion, garlic, and leek until soft.

  4. Stir in flour to form a roux. Gradually add the reserved milk and cream, whisking until smooth.

  5. Add mustard and cheddar cheese. Stir until cheese melts and sauce thickens. Season to taste.

  6. Layer half the potatoes in the baking dish, then flaked haddock, sautéed leek mixture, and remaining potatoes.

  7. Pour cheese sauce evenly over the top.

  8. Cover with foil and bake for 25 minutes. Uncover and bake another 10–15 minutes until golden and bubbling.

  9. Garnish with chopped parsley and serve hot.
